- Dr. Ellouise is a Professional Health Coach & has been in the field of education for over 40 years. During research for her Master’s thesis, she read over 300 books on health and nutrition. That thesis, entitled “Serving Healthy Foods in a Childcare”, preceded her dissertation for her Ph.D., entitled "A Study of the Knowledge and Practices of Mothers in America Regarding Nutrition". Her specialty is helping mothers who wish to be healthier and who also wish to help their children be healthier. Dr. Ellouise has been a speaker at local area conferences, given Power Point presentations about nutrition, has written “Yummy 4 the Tummy” (a vegetarian cookbook), has contributed a chapter on child health to a book which was nationally published in the Fall of 2008 (Surviving the American High-Tech Diet) & is in the process of writing an additional book on children’s nutrition.
