Yummy and Refreshing Raw Salad!

Cucumber mint salad: combine 1 bunch each mint and parsley, stems removed, 2 diced cucumbers, 1 diced red bell pepper, 6 minced scallions, 4 seeded and chopped tomatoes, cup fresh lemon juice, cup extra virgin olive oil, teaspoon sea salt and teaspoon paprika.
