God Provides! My Food Bank Chili Recipe

All week long, I've been craving chili but, I didn't have the ingredients. One of the ingredients that makes it taste so good is bell peppers but I rarely get that at the Food Bank. Yesterday, when I went to the food bank, they had onions, bell peppers and tomatoes! Wow! God really provides.....not just what we need but, also, what we want! Here's my chili recipe:




1 large package Adzuki, small red or kidney beans (Adzuki beans have the highest protein ratio)

2 large cans of diced tomatoes or Fire Roasted tomatoes (dice them)

2 large bell peppers (diced)

1 large onion (diced very fine)

2 Tbs chili powder (add more or less according to your taste)




I soak the beans overnight to remove some of the bean sugars. In the morning, dump the beans into a collander and then rinse. Put back into the pot and put enough distilled water to cover them plus about 2" more. Bring to a boil. Turn down the heat and boil for one hour. Repeat this process 2 more times (this removes most of the bean sugars so it lessens the "bean" effect).




Meanwhile, put the tomatoes, bell peppers, onions and chili powder into a large crockpot and turn on high (or, if you don't have a crockpot, just put them into another pot and bring to a boil then reduce the heat to medium).




When the beans have been cooked the three times, combine the beans with the tomato mixture. If using the crockpot, cook on high for at least 5 hours. If using the stovetop method, cook on low for at least an hour.




Taste to be sure the flavors have blended before serving. If not, just cook a little longer.

Yummy Sweet Potato Vegetable Soup!

This yummy soup is a great tummy warmer! (adapted from The Kentucky Fresh Cookbook)
2 Tbs extra virgin olive oil
1 medium onion, chopped (about 1 cup)
4 ribs celery, thinly sliced
2 large sweet potatoes, peeled and cut into small cubes (about 4 cups)
4 cloves garlic, minced
2 tsp sweet or smoked paprika
1 tsp tumeric
1 tsp dried oregano
1/2 tsp ground ginger
1 bay leaf
1/2 tsp sea salt
1/2 tsp freshly ground black pepper
1/8 tsp cayenne pepper (optional)
6 cups reduced-sodium vegetable broth (McKay's has a non-chicken broth that is delicious)
1 28 oz can diced tomatoes with juice
1 1/2 cups cooked or canned chickpeas, drained (15 oz can)

Instructions:
In a Dutch oven, heat the olive oil over medium heat. Add onion and celery and cook, stirring occassionally, until softened, about 5 minutes. Stire in sweet potato, garlic, paprika, turmeric, oregano,m ginger, bay leaf, sea salt, pepper and cayenne (if desired). Stir and cook for about 1 minute to blend ingredients and start to soften the garlic. Stir in the broth, tomatoes, and chickpeas. Bring to a boil, reduce to a simmer, and copk, partially covered, for about 30 minutes. Seasson to taste with sea salt and pepper.

Alzheimer's is a condition in whic brain cells degenerate and die. Lion's Mane is one of the edible mushrooms widely eaten in japan and China. Japanesse studies show that Lion's Mane is able to regenerate neurons by stimulating production of Nerve Growth Factor.

Strawberry Pineapple Ice Cream--Kinda Sorta Healthy!

Recipe: 1 can coconut milk, 7/8 cup honey, 4 eggs stirred and heated to 170 degrees then chilled in fridge. Puree in blender with 1 1/2 cup strawberries, pineapple (drained, from can) and Tbsp pure vanilla extract. Whisk together with another can of coconut milk, and place either in ice cream maker or directly in freezer for minimum 4 hours.

If you don't do eggs, use egg replacer.

Trade the beach for broccoli: the color you get form eating frutis and vegetables is more appealing than the color you get form the sun, research shows. Fruits and veggies contain carotenoids-natural pigments that give them their color. When you munch on a carrot, those carotenoids are absorbed by your skin, giving it a golden tone. In one European study, participants digitally adjusted photos of people to make them appear "as healthy as possible." Participants increased the golden carotenoid color more thanthey upped the darker tones associated with tanning. Says study author ian Stephen, Ph.D. "Carotenoid color makes you look healthier and more attractive."

What to Buy Organic?

Since organic foods are more expensive, it's useful to knwo which ones are especially important to buy. The Environmental Working Group (EWG) produces a guide to help consumers find the safest fruits and veggies.
EWG lists its "diry dozen"-the fruits and veggies most liekly to be contaminated with pesticides ib www,foodnews.org
Apples, peaches, celery, cherries, bell peppers, adn imported grapes are usually near the top of the list.
EWG also lists their "clean 15" which are th lest contaminated. These include onions, avocados, pineapples and cabbage.

Sweet News About Organic Strawberries!

A recent compariso of organic and conventional strawberry farms and their fruit found tha the organic farms porduced better tasking and more nutritious berries while leaveing the soil in better shape.

the berries and the soil were sampled several times over a two-year peirod. "We found that the organic farms had strawberries with longer shelf life..and higher antioxidant activity and concentrations of ascorbic acid (vitamin C)" wrote the authors of the study which ws published in the peeer-reviewed onine journal PLoS One. "In one variety, sensory panels judged organic strawberries to be sweeter and have better flavor..than their conventional counterparts."
the organically farmed soils had more total carbon and nitrogen, more microbes, and higher concentrations of micronutrients. GThe tests were performed on soil and berries from 13 organic farms adn 13 conventional ones. All were in California were 90 percent of the nation's strawberries are grown.

A sore hip makes everything more difficult -- from sleeping to walking up stairs. But you could keep those hips of yours feeling fine if you're a lover of garlic and onions.

About 15 percent of older adults regularly deal with hip pain. But in a recent study of women, those who tended to eat lots of produce -- particularly herbs from the allium family, such as onions and garlic -- showed fewer signs of hip osteoarthritis in x-ray tests.

Arthritis-Fighting Allium
The study analyzed the diets of a large group of middle-aged adult twins, most of whom did not have symptoms of arthritis when the study started. Eating lots of allium herbs correlated with less arthritis in the hip. And in a separate lab analysis, researchers also found that diallyl disulphide -- a substance found in the allium family -- appeared to help inhibit enzymes that can cause damage to joint-protective cartilage.

The evidence was not strong enough to receive a grade of convincing, which is the best grade possible. Soft Drinks May Lead to Gout - Fructose is the Culprit!

The incidence of gout appears to be increasing among women (gout has traditionally affected more men than women). New data points to fructose in sweetened beverages as a potential culprit. Gout isn't just painful--it can cripple joints and may b an independent risk factor for cardiovascular disease. Gout develops as a result of uric acid in the blood tha precipitates into crystals that lodge in joints, causing pain. In men, gout has been linked to the consumption of fructose--a sugar used to sweeten sodas, juices and many other foods. Fructose, it appears, triggers production of uric acid in the body. Based on data from the large Nurses' Health Study, researcher have now extended the warning about fructose to women. they say that even one sweetened soda or juice a drink a day increase a woman's risk of developing gout.
